I took this picture just this morning when I made a new recipe for pancakes, this time it was banana quark pancakes! They were really delicious and had that more thickness of american pancakes because of the quark in it.
What is quark?
Quark is soft, fresh cheese, that has a similar creamy texture to sour cream and a mild tangy taste. Originating in Europe (the name essentially means “curd”), quark is a versatile creamy cheese, useful in everything from cake recipes to dips and low-fat spreads. Quark is like a thicker yoghurt with lesser fat and more protein!

Recipe for banana quark pancakes: (Makes about 9-10 pancakes)
- 1 mashed banana
- 180-190 g low fat quark
- 30 g graham flour
- 1 egg
- 1 eggwhite
- some low fat milk if the texture is too thick.
1. Take a bowl and mash the banana well with a fork. Blend down all the other ingredients.
2. Fry all the pancakes in a little olive oil/ rapeseed oil if needed. Take about 2 tbsp per pancake. ENJOY! 😀
